White Chocolate Walnut Meringues

Ingredients
- 4 egg whites, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup granulated sugar
- 12 ounces white chocolate chips
- 1 cup walnuts, chopped fine
Instructions
- Preheat the oven to 250 degrees and spray two baking sheets with pam. In a large bowl, using an electric mixer, beat the egg whites until frothy, 2 minutes. Make sure none of the egg yolks get into the whites, or they won't beat properly. Add a pinch of salt, vanilla, and sugar one tablespoon at a time, beating until glossy peaks form, 5 minutes. Using a rubber spatula, fold in the chocolate chips and walnuts. Transfer mixture to a large ziplock bag or pastry bag. If using a ziplock bag, cut the corner off using scissors. Pipe 2 inch rounds onto the baking sheets, 2 inches apart. Bake for 45 minutes. Turn oven off and leave the cookies in the oven for at least 2 hours. This allows the meringues to dry out and get that wonderful crispy on the outside, chewy on the inside texture.
