Whipped Feta & Cherry Tomato Crostinis

Ingredients
- 1 large baguette
- 4 oz. feta, crumbled
- 2 oz. cream cheese, softened
- 2/3 cup olive oil
- 1 lemon, juice
- 2 medium shallots, sliced thin
- 2 garlic cloves, minced
- 2 tablespoons red wine vinegar
- 2 pints cherry tomatoes
- 3 tablespoons fresh basil, julienned
Instructions
- In a large bowl, combine the shallots, garlic and vinegar. Whisk in 1/3 cup olive oil. Add the tomatoes and basil and toss to coat. Season with salt and pepper and set aside, 1 hour.
- To a food processor, add the feta, cream cheese, 1/3 cup olive oil, lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper. Pulse until smooth. Transfer to a bowl and set aside. Slice the baguette into 1/2 inch thick slices and place on a baking sheet. Brush with olive oil, salt and pepper and broil until slightly browned. Spoon a tablespoon or so of the whipped feta onto each crostini. Top each with a spoonful of the tomatoes, sprinkle with extra basil and serve.
