Lemon-Shallot Vinaigrette
- 1 lemons, juice
- 1 shallot, minced
- 1/2 cup olive oil
- 1/4 cup fresh parsley, chopped
- 2 teaspoons honey
- 2 teaspoons dijon mustard
Salad
- 1/2 cup Lemon-Shallot Vinaigrette
- 1 cup orzo
- 3 cups watermelon, seeded and diced
- 4 cups arugula
- 4 oz. feta cheese, crumbled
Instructions
- Begin by making the vinaigrette. In a large bowl, combine the lemon juice and minced shallot. Whisk in the olive oil, parsley, honey and dijon. Add salt and pepper to taste.
- Next, cook the orzo according to the package instructions. Add the warm pasta to the bowl with the vinaigrette, tossing to coat. Cover and chill for 3 hours or overnight. When ready to serve, toss the pasta with the watermelon, arugula and feta. Add salt and pepper to taste.
