Vanilla Ice Cream w. Peach-Basil Syrup

Ingredients
- 2 whole peaches, pitted and chopped.
- 2 cups sugar
- 2 cups water
- 18 basil leaves
- Vanilla bean ice cream, or fruit sorbet
Instructions
- Place chopped peaches in a large bowl and set aside. In a small pot combine sugar and water. Stir to combine. Turn on heat to high and boil for 5-7 minute syrup is thicker and sugar is completely dissolved. Pour warm syrup in a blender and add basil leaves. Blend and pour over peaches. Refrigerate for a few minutes to allow flavors to blend and spoon mixture over ice cream.
