Tilapia Fish Tacos w. Sour Cream Slaw, Avocado & Mango

Fish
- 1 1/2 lb tilapia fillets
- 1 tablespoon olive oil
- 1 lime, juice
- 2 teaspoons honey
- 2 garlic cloves, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/4 teaspoon cayenne pepper
Slaw
- 2 cups coleslaw mix
- 2 tablespoons fresh cilantro, chopped
- 1/4 cup low fat sour cream
- 1 lime, juice
- 1 avocado, diced
- 1 mango, diced
- 8 flour tortillas
- extra cilantro and lime wedges for garnish
Instructions
- In a large zip-lock bag, add the tilapia along with the rest of the marinade ingredients. Close the bag and massage the seasonings into the fish. Place in fridge to marinate, 20 minutes.
- Meanwhile, in a large bowl, add the slaw ingredients, tossing to coat. In a large pan over medium-high heat, heat the olive oil. Cook the fish until browned, 4 minutes a side. (You can also cook your fish on the grill if you would prefer). Microwave the tortillas on a plate until warm, 45 seconds. To make your tacos: add to the tortillas a bit of each: tilapia, slaw, mango, avocado. Garnish with extra cilantro or a squeeze of lime if you wish!
