Cupcakes
- 1 box white cake mix (15.25 oz.)
- Food Coloring Gel (Red, Yellow, Green, Blue)
Frosting
- 1 stick butter, softened
- 8 oz. cream cheese
- 4 cups confectioners sugar
- 2 teaspoons vanilla extract
- Sprinkles, optional
Instructions
- Line two muffin tins with liners and spray with pam. Preheat oven to 400 degrees. Prepare cake mix according to instructions and divide batter evenly into 6 bowls. Using food coloring gels, mix six colors: red, orange, yellow, green, blue, purple. Evenly distribute the red batter among 18 muffin cups, using your fingers to spread evenly. Repeat with remaining colors in the order of orange, yellow, green, blue, purple, making sure muffin cups are filled about 3/4 way full. Bake for 11-13 minutes or until a toothpick inserted in the center comes out clean. While baking, prepare the frosting. Beat together the butter and cream cheese, 5 minutes. Add in the confectioner's sugar 1 cup at a time until combined. Beat in the vanilla extract. Transfer to a piping bag or ziplock bag with the corner cut off and once cupcakes are completely cooled, pipe outside-in. Sprinkle with rainbow sprinkles and enjoy!
