Ingredients
  1. 2 large sweet potatoes
  2. 1/2 cup graham cracker crumbs
  3. 1/3 cup cornstarch
  4. 1/4 cup brown sugar
  5. 1/4 cup white sugar
  6. 1 egg
Instructions
  1. Preheat the oven to 375 degrees and spray two baking sheets with pam. Peel the sweet potatoes and rinse well. Slice into sticks, around 1/2 inch wide. In a large bowl beat the egg and add the sweet potato sticks, coating completely. In a separate bowl combine the graham cracker crumbs, cornstarch, and both sugars. One at a time move the egg coated fries into the dry mixture, then place on baking sheet. Bake potatoes for 20 minutes, flip over with a spatula, and bake for a remaining 10 minutes. Serve immediately with maple syrup on the side for dipping.
Notes
  1. These fries are also good when cooled, but become cake-like instead of crispy the longer they are stored.
