Stuffed Mushrooms w. Sausage & Blue Cheese

Ingredients
- 3/4 pound turkey sausage, casing removed
- 2 cloves garlic, minced
- 12 small portobello mushrooms (or 6 large), stems removed
- 4 ounces light cream cheese
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1/2 cup breadcrumbs
- 3/4 cup gorgonzola, crumbled
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350 degrees. Brush caps with olive oil, sprinkle with salt and pepper and place cap side down in a baking dish. In a medium saucepan, cook turkey sausage until browned, 10 minutes. Add garlic and cook for 1 more minute. Remove from heat. Stir in cream cheese, thyme, oregano, bread crumbs, 1/2 cup gorgonzola, 1/2 teaspoon salt, and 1/2 teaspoon pepper until well combined. Place tablespoon or so of mixture in each mushroom and sprinkle remaining 1/4 cup gorgonzola on top. Bake for 10 minutes or until mushrooms are tender and mixture is slightly browned.
