Streusel
- 1/4 cup flour
- 1/4 cup whole wheat flour
- 1 tablespoon sugar
- 3 tablespoons light brown sugar
- 1/4 teaspoon cinnamon
- pinch of nutmeg
- pinch of salt
- 3 tablespoons butter, melted
Muffins
- 1 egg
- 1/4 cup light brown sugar
- 3 tablespoons sugar
- 5 tablespoons butter, melted and cooled
- 3/4 cup sour cream
- 3/4 cup flour
- 3/4 cup whole wheat flour
- 1 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup strawberries, cut into 1/2 inch pieces
Instructions
- Preheat oven to 375 degrees and grease 12 muffin cups. First make the streusel. In a small bowl, stir together the flours, sugars, spices, and salt. Add the melted butter and stir until crumbly, set aside.
- In a large bowl, whisk the egg with the brown and white sugars. Add in butter and sour cream, stirring to combine. In a separate bowl, mix together the flours, baking powder, baking soda, and salt. Add to the sour cream mixture and stir to combine. Add the chopped strawberries to the batter (make sure they are chopped fine or else muffins will fall apart when lifted out of muffin cups), along with 1/3 of the streusel mixture. Divide the batter among the muffin cups and sprinkle each with the remaining streusel. Bake for 15-20 minutes until the tops are golden and a tester inserted in the center comes out clean. Let muffins cool completely before removing from cups.
