Strawberry Short-CAKE

Cake
- 1 1/2 cup flour
- 3 tablespoons cornstarch
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 stick plus 1 tablespoon butter, softened
- 3 eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla
- 1 lb strawberries
- 1 1/2 cup sugar
Frosting
- 8 ounces cream cheese
- 2 sticks butter
- 1 teaspoon vanilla
- 1 1/2 lbs powdered sugar, was a bag and a half for me
Instructions
- Preheat oven to 375 degrees. Grease and flour an 8X8 inch cake pan all over, make sure it is at least 2 inches deep. In a medium bowl, combine the flour, cornstarch, baking soda, and salt. In a separate large bowl, cream butter and sugar together until fluffy. Add eggs one at a time, sour cream, and vanilla and beat until combined. Next slowly add dry ingredients and mix. Pour batter into pan and bake for 45-50 minutes or until toothpick comes out clean in the center. Remove from oven and flip over onto a plate, allowing to cool completely, 15 minutes. Meanwhile wash, stem and slice the strawberries in half. Place in bowl with sugar and mash with fork. Once the cake has cooled, slice in half through the middle with a very sharp knife, placing each half on separate plates (don't worry if they aren't perfect halves, mine sure weren't). Spread half of strawberries evenly over each half, pouring on all juices, and move to the freezer for 10 minutes (allows for icing to be spread on easier). While freezing, make the frosting. Beat the cream cheese, butter, powdered sugar, and vanilla together on low speed (should be very thick). Remove cake halves from the freezer. Use 1/3 of frosting to spread over top of strawberries on one layer. Place second layer on top, adding 1/3 frosting to top. Use remaining 1/3 frosting to spread around sides, covering completely. Use cake knife to smooth out and make all pretty. Garnish with chopped strawberries if you wish. Best stored in refrigerator, as frosting becomes soft when left out.
