Spicy Shrimp Rigatoni

Ingredients
- 12 oz. rigatoni
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 1/2 teaspoon red pepper flakes
- 1 shallot, chopped fine
- 1/4 cup white wine
- 1-15 oz. can diced tomatoes
- 1 bunch basil, julienned
- 2 tablespoons heavy cream
- 1 cup parmesan cheese, shaved
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package. Drain. While the pasta is cooking, heat the olive oil in a large pan over medium-high heat. Add the shrimp and season with salt and 1/4 teaspoon of the red pepper flakes. Cook until pink, 2 minutes a side. Transfer to a plate. Add the shallot to the pan and cook, 2 minutes. Add the wine, scrapping up the bits from the bottom of the pan. Cook until reduced, 2 minutes. Add in the tomatoes, half of the basil and remaining 1/4 teaspoon red pepper flakes. Cook until thick, 7 minutes. Stir in the heavy cream and cook, 1 minute. In a large bowl, toss together the pasta, tomato sauce, cooked shrimp and parmesan cheese. Spoon into bowls and top with remaining basil and more parmesan cheese if you wish.
