Ingredients
  1. 1 cup graham cracker crumbs
  2. 1 1/4 cups flour
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 stick butter, softened
  6. 1/2 cup light brown sugar
  7. 1/3 cup sugar
  8. 1 egg
  9. 1 teaspoon vanilla extract
  10. 12 large marshmallows, cut in half
  11. 2 Hershey's chocolate bars (24 pieces)
Instructions
  1. Preheat the oven to 350 degrees and spray two mini muffin tins with pam. In a large bowl, beat the butter, light brown sugar and sugar together until creamy, 5 minutes. In a medium bowl, combine the graham cracker crumbs, flour, baking soda and salt. Add the dry ingredients to the wet until just combined. Drop large tablespoon of dough into the mini muffin tins. Press down and bake for 8 minutes or until the edges are slightly golden. Remove from the oven and using a small spice jar or shot glass, press an indent into each cookie. Press half a marshmallow, sticky side down, onto each cookie. Place under the broiler for 2 minutes or until melted and slightly browned. Remove from the oven and lay a piece of chocolate over the top of each. Once cooled, remove cookie cups from their tins.
