Ingredients
  1. 1 lb shrimp, deveined
  2. 3 stalks green onions,
  3. 4 garlic cloves, minced
  4. 1/2 pound rice noodles
  5. 2 1/2 tablespoons soy sauce
  6. 2 1/2 tablespoons brown sugar
  7. 1 teaspoon hot sauce
  8. 4 eggs
  9. 2 limes
  10. Cilantro, chopped
  11. 1/4 cup peanuts, chopped fine
Instructions
  1. Cook noodles according to package instructions. Traditional rice noodles cook by soaking in boiling water for 5-8 minutes, draining, and rinsing in cold water. I usually leave around 1/4 cup water when draining to prevent noodles from sticking together. In a small bowl, mix together the fish sauce, soy sauce, brown sugar, and hot sauce. Heat 1 tablespoon of olive oil over in a large pan with high walls over medium-high heat. Add the shrimp, garlic, 2 tablespoons sauce, and ground pepper and cook for 5 minutes or until the shrimp is cooked. Transfer to a plate. While shrimp is cooking, whisk eggs together in a small bowl with some salt and pepper. Return pan to medium-high heat and add 1 tablespoon olive oil. Saute the white parts of the green onions for 1 minute or so. Add eggs and scramble lightly, 3 minutes. Add 1 tablespoon olive oil, noodles, shrimp, green parts of green onions, and remainder of sauce to pan. Toss and season with juice of 1 lime, salt and pepper. Serve in large bowls or plates with lime wedges, cilantro, and chopped peanuts for garnish.
