Ingredients
- 1 package soba noodles, 300 g
- 1 cup edamame, fresh or frozen
- 3 scallions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/3 cup olive oil
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon balsamic vinegar
Instructions
- Cook the soba noodles according to the package instructions. Usually this involves cooking the noodles in boiling water before draining, and running cold water over them. While the noodles are cooking, remove the edamame from their pods, transferring to a bowl. In a separate small bowl, combine the olive oil, soy sauce, sesame oil, rice vinegar, and balsamic vinegar. Serve cooked noodles in bowls with however much edamame, scallions, and cilantro you like. Top each with a few tablespoons of the sauce and enjoy!
