Sesame-Scallion Butternut Squash

Ingredients
- 1 large Butternut squash
- 1 tablespoon olive oil
- 1/4 cup plain Greek yogurt
- 1 tablespoon sesame seeds, toasted
- 1/4 cup golden raisins
- 1/4 fresh cilantro, chopped
- 3 scallions, chopped (green parts only)
- 1 lime, juice
Instructions
- Preheat oven to 425 degrees. Halve and seed the butternut squash; slicing until 1/2 inch thick. Spread in even layers on foil lined baking sheets. Drizzle with olive oil, salt and pepper, tossing to coat both sides. Bake until tender, 20 minutes, flipping halfway.
- Transfer to a serving bowl and top with Greek yogurt, sesame seeds, golden raisins, cilantro and scallions. Squeeze lime juice over top and serve.
