Roasted Jalapeño & Corn Hummus

Ingredients
- 2 medium jalapeños
- 1 14 oz. can chickpeas
- 1/2 cup corn, fresh or frozen
- 4 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the broiler and place the jalapeños on a baking sheet. Broil on all sides until charred, 7 minutes. Let cool completely before slicing in half and removing the tops and seeds. Chop and add to a food processor along with the chickpeas and corn. Pulse until combined, steaming in the olive oil. Add salt and pepper and pulse once more. Transfer to a bowl and top with more corn and a drizzle of olive oil. Serve with tortilla chips for dipping!
