Roasted Garlic Mashed Potatoes

Ingredients
- 2 pounds red potatoes, quartered
- 1 head garlic
- 5 tablespoons butter
- 3/4 cup heavy cream
- olive oil
- salt & pepper
Instructions
- Preheat oven to 425 degrees. Slice off top of the garlic head, drizzle with olive oil and wrap in foil. Plae on a sheet tray and bake for 35 minutes. Remove from oven and let cool. Using your hands, remove the cloves and mash with a spoon. In the meantime: Bring a large pot of salted water to a boil and cook potatoes until tender (15 minutes). Drain and mash in a bowl until smooth (I like mine a but chunky). Heat butter and cream. Add to the potatoes along with the roasted garlic and mash all together. Season with salt and pepper.
