Roasted Cherry Tomato & White Bean Soup

Ingredients
- 4 tablespoon olive oil
- 2 cups cherry tomatoes
- 1 chicken sausage, diced (can substitute with 4 slices of bacon)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 19 oz. can white beans, drained and rinsed
- 3 cups chicken broth
Instructions
- Preheat the oven to 400 degrees and spray a baking sheet with pam. Toss the cherry tomatoes with a tablespoon of olive oil, salt and pepper. Roast for 30 minutes or until slightly caramelized. Meanwhile, in a large pot cook the chicken sausage over medium heat until browned, 7 minutes. Transfer to a plate. Add the onion to the same pot and cook until soft, 5 minutes. Add the garlic and cook, 1 minute. Stir in the white beans and broth and bring to a boil. Reduce to a simmer and cook until thick, 5 minutes. Puree the soup using an immersion blender or by transferring in batches to a blender. Season with salt and pepper. Spoon into bowls and top with the cooked chicken sausage and roasted cherry tomatoes.
