Raspberry Brown Butter Bars

Crust
- 7 tablespoons butter, melted
- 1/3 cup sugar
- 1/4 teaspoon vanilla extract
- 1 cup plus 1 tablespoon flour
Filling
- 1/2 cup sugar
- 2 eggs
- 1/4 cup flour
- 1 teaspoon vanilla extract
- 1 stick butter
- 1 lb fresh raspberries
Instructions
- Preheat the oven to 375 degrees and spray an 8X8 baking pan with pam. In a small bowl, combine the butter, sugar and vanilla. Add the flour and a pinch of salt and stir until combined. Transfer the dough to the pan, and using your fingers, press evenly across the bottom of the pan. Bake the crust for 15-18 minutes or until lightly golden. Next begin making the filling. In a small pan, heat the butter over medium heat until it becomes a deep brown color, about 7 minutes stirring often. In a medium bowl, whisk sugar, eggs, and a pinch of salt. Add the flour and vanilla and stir until combined. Gradually add the cooled brown butter until combined. Arrange raspberries in bottom of the cooled crust. Pour batter over the fruit and bake until golden and a toothpick inserted into the center comes out clean, 40 minutes. Allow the bars to cool completely before cutting into squares.
