Ingredients
- 1 garlic clove, minced
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 4 boneless pork chops
- 2 cups fresh blueberries
- 1/4 cup light brown sugar
- 1 tablespoon balsamic vinegar
- 2 teaspoons butter
- 1 teaspoon fresh thyme, chopped fine
- 1 teaspoon fresh sage, chopped fine
Instructions
- Preheat the oven to 350 degrees. In a small bowl, combine the garlic, pepper, salt, and cayenne. Rub liberally all over the pork on both sides. In a large skillet coated with cooking spray, cook the pork chops until browned, 5 minutes per side. Transfer to a baking dish and bake uncovered, 10-15 minutes. While the pork is baking, in the same skillet add the remaining ingredients. Cook over medium heat until thick, 10 minutes. Serve with pork.
