Peppermint-Brownie Ice Cream Pie

Ingredients
- 1 package fudge brownie mix
- 1/2 cup bittersweet chocolate chips
- 1 pint peppermint ice cream
- 1 cup heavy cream
- 1/4 cup confectioners sugar
- 1/8 teaspoon peppermint extract (optional)
- 10 peppermint candies
Instructions
- Spray a 10 inch pie pan with pam and preheat oven to temperature indicated on brownie box. Prepare brownies according to box and transfer to pie pan. Bake for 5 minutes less than indicated. Allow to cool completely and top with softened ice cream. Transfer to freezer and freeze until set, 3 hours or overnight. In a large bowl, beat together the heavy cream, confectioners sugar and peppermint extract. Top with plastic wrap and refrigerate until ready to serve. Once pie is ready to eat, top with whipped cream, spreading in an even layer. Add peppermint candies to large ziplock bag and using the back of a cup, pound until crushed. Sprinkle crushed candies around rim of pie. Slice and top each with another peppermint candy if you wish.
