Ingredients
- 6 bell peppers (red, yellow, or orange), cut into 2 inch pieces
- 2 medium onions, thinly sliced
- 4 cloves garlic
- 2 tablespoons tomato paste
- 1/2 olive oil
- 1 cup white wine
- 3 fresh bay leaves
- 1/2 cup basil, chopped
- 2 teaspoons balsamic vinegar
Instructions
- Heat olive oil in a large pot with onion, garlic, and bay leaves and cook until soft, 6 minutes. Add tomato paste, 1 1/2 teaspoons salt and 1/2 teaspoon pepper and cook, 5 minutes. Add peppers and cook until just soft, 10 minutes. Add wine, 1 cup water and bring to boil. Cover and simmer on medium for another 15 minutes. Uncover, increase heat to high and continue cooking until most of the liquid has evaporated and peppers are tender, 15 minutes. Remove bay leaves. Stir in balsamic vinegar, basil, and season with more salt and pepper if needed.
