Cupcakes
- 1/2 stick butter, softened
- 1/2 cup peanut butter
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups flour
- 1 1/4 teaspoon baking powder
- 1/3 cup milk
- 3/4 cup peanut butter chips
Frosting
- 1/2 cup butter, softened
- 8 oz. cream cheese
- 1 tablespoon vanilla extract
- 4 cups powdered sugar
- 1/3 cup dark cocoa powder
- 1 tablespoons milk
Instructions
- Preheat the oven to 350 degrees. In a large bowl, beat together the butter and peanut butter until smooth, 3 minutes. Add the sugar and eggs and beat until fluffy, 3 minutes. Add the vanilla, mixing to combine. In a medium bowl, add together the flour and baking powder. Add the dry ingredients to the large bowl, 1/2 at a time. Add the milk and combine. Fold in the peanut butter chips. Pour the batter into cupcake tins and fill 2/3 of the way. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
- When the cupcakes are baking, make the frosting. Beat the butter and cream cheese together in a large bowl until smooth. Add in the vanilla. Slowly add the powdered sugar, 1/2 cup at a time until combined. Add in the cocoa powder and mix until combined. Add in the milk and beat. If the frosting is too thick, add milk, 1 teaspoon at a time. If it is too thin, add powdered sugar, 1 tablespoon at a time. Once you have reached your desired consistency, add the frosting to a pastry bag or large ziplock, cutting a corner off with scissors. Once cupcakes are completely cooled, pipe with frosting and top with any sprinkles or candy decorations you wish.
