Ingredients
  1. 1/4 cup butter, melted
  2. 1/2 cup peanut butter
  3. 1 egg
  4. 3/4 cup light brown sugar
  5. 1 teaspoon vanilla extract
  6. 1 cup flour
  7. 1/2 cup strawberries, chopped
  8. 1/4 cup strawberry jam
Instructions
  1. Preheat the oven to 350 degrees Line a 8X8-inch pan with foil and spray with Pam. In a large microwavable bowl, melt the butter. Whisk in the peanut butter and brown sugar. Add in the egg and vanilla. Add the flour and stir until just combined. Fold in the strawberries and pour batter into the pan, smoothly lightly with a spatula. Dollop the strawberry preserves over the top in tablespoon drops and using a toothpick or sharp knife, swirl into batter. Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Cool bars in the fridge for at least 2 hours before slicing into squares.
