Cake
- 2 sticks butter, softened
- 2 cups sugar
- 4 eggs
- 4 oranges, zest
- 3 cups plus 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/4 cup orange juice, freshly squeezed
- 3/4 cup buttermilk
- 1 teaspoon vanilla extract
- 2 cups semi sweet chocolate chunks
Syrup
- 1/4 cup sugar
- 1/4 cup orange juice, freshly squeezed
Ganache
- 8 ounces semi sweet chocolate chips
- 1/2 cup heavy cream
- 1 teaspoon instant coffee
Instructions
- Preheat the oven to 350 degrees and spray a 10-inch Bundt pan heavily with pam. In a large bowl, beat together the butter and sugar with an electric mixer until fluffy, 5 minutes. Add the orange zest and eggs one at a time. In a medium bowl, combine 3 cups flour, baking powder, baking soda, and salt. In another medium bowl combine the orange juice, buttermilk, and vanilla. Add the flour and buttermilk mixtures to the butter mixture, working in batches, beginning and ending with the flour. In a small bowl, toss the chocolate chunks with two tablespoons of flour. Add to the batter and pour into the Bundt pan, smoothing on top. Bake for 45 minutes to an hour, until a knife inserted into the center comes out clean. While the cake is baking, make the syrup. In a small pan over medium heat, cook together the sugar and orange juice until the sugar dissolves, 10 minutes. Allow the cake to cool completely before removing from the pan, 20 minutes. Spoon the syrup over the cake and allow to cool, 10 minutes. Make the ganache by melting the chocolate chips, heavy cream, and coffee granules together in a medium bowl on top of a pot of boiling water. Drizzle the ganache on top of the cooled cake. Slice and enjoy!
