Crust
- 5 graham cracker sheets
- 2 tablespoons butter, melted
- 1 tablespoon light brown sugar
Cheesecake
- 8 oz. cream cheese
- 1 cup confectioners sugar
- 1 tablespoon vanilla extract
- 8 oz. Coolwhip
- 2 tablespoons strawberry jam
- 1 tablespoon blueberry jam
- red and blue food coloring
- 1 cup strawberries, chopped
- 1/2 cup blueberries
Instructions
- In a food processor, pulse the graham crackers into crumbs. Transfer to a small bowl stir together with melted butter and brown sugar. Divide evenly between four small clear glasses. In a large bowl, beat the cream cheese until smooth. Add in the powdered sugar and vanilla and beat until smooth. Add in the Coolwhip and beat until fluffy, 3 minutes. Divide the mixture evenly among three bowls. Add the strawberry jam to one bowl and the blueberry jam to another, stirring to combine. Add in drops of red food coloring to the strawberry mixture and drops of blue to the blueberry mixture until you reach your desired colors. Pipe or spoon 1/4 of the strawberry mixture into glass. Top each with the chopped strawberries. Spoon 1/4 of the vanilla mixture into each glass and top each with blueberries. Spoon 1/4 of the blueberry mixture into each glass, topping with remaining strawberries and blueberries. Refrigerate at least 1 hour before serving.
