Brownie
- 4 oz bittersweet chocolate chips, 60 % cocoa
- 1 stick butter
- 1 1/4 cups sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 3 eggs
- 2 tablespoons cocoa powder
- 2/3 cups flour
Filling
- 1 stick butter, soft
- 3 oz. cream cheese, soft
- 1 1/2 teaspoon mint extract
- 10 drops green food coloring
- 2 1/2 cup powdered sugar
Topping
- 8 oz. semi-sweet chocolate
- 1/2 stick butter
Instructions
- Preheat the oven to 325 degrees and line a 13X9 inch baking dish with foil. Spray with pam and set aside. In a large bowl, heat the bittersweet chocolate and butter in the microwave in 30 second intervals, stirring in between, until smooth. Add in the sugar, salt and vanilla extract. Once cooled, add in the eggs one at a time, stirring to combine. In a small bowl, combine the flour and cocoa powder. Add the dry ingredients to the wet, half at a time, mixing to combine. Pour into the baking dish, smoothing the top with a spatula and bake for 20-22 minutes or until a knife inserted in the center comes out clean. Cool completely before frosting, 1 hour.
- While the brownies are cooking, make the frosting. In a large bowl, beat the butter and cream cheese together until fluffy, 3 minutes. Add in the mint extract and green food coloring. With the mixer on low, slowly add the powdered sugar and a pinch of salt and beat until soft. If too wet, feel free to add more powdered sugar. Transfer the frosting to the fridge and chill, 30 minutes.
- Once the brownies are completely cool, spread the frosting on top in an even layer. Transfer back to the fridge to harden, 20 minutes. Begin making the chocolate topping. In a small bowl, melt the semi sweet chocolate and butter together in 30 second intervals, stirring in between, until smooth. Remove the brownies from the fridge and spread the chocolate in an even layer. Return to the fridge and chill, 30 minutes. Cut into squares and store in an airtight container.
