Ingredients
- 1 3/4 cup flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 stick butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar
- 1/2 cup peanut butter, creamy
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- mini Reeses peanut butter cups, about 40
Instructions
- Preheat oven to 375 degrees and grease a mini muffin cup pan with pam. In a large bowl, cream together the butter, sugar, brown sugar, and peanut butter until fluffy, 5 minutes. Add in the egg, vanilla, and milk, beating to combine. In a separate bowl, combine the flour, salt and baking soda. Add the flour mixture to the butter mixture 1/3 at a time, beating to combine. Roll batter into 1 1/2 inch balls (should end up with about 36), and place each into the muffin cups. (You may have to work in batches like I did, only having 1 mini muffin pan to use). Press balls down slightly with your fingers and bake for 8-10 minutes, or until lightly golden brown. While the cookies are baking, unwrap the mini Reeses from their wrappers and have them ready to go. Remove the cups from the oven and immediately press a mini Reeses into the center of each ball. Let cool completely before removing from pan, 10 minutes. Use a knife to help them pop out easier.
