Mashed Sweet Potatoes w. Maple & Bacon

Ingredients
- 5 medium sweet potatoes
- 4 slices bacon
- 1 tablespoon bourbon
- 1/2 cup heavy cream
- 6 tablespoons butter
- 3 tablespoons maple syrup
Instructions
- Peel and quarter the sweet potatoes. Transfer to a large pot and fill with cold water until the potatoes are covered by 1 inch. Bring to a boil and reduce to medium, simmering until tender, 30 minutes.
- Meanwhile, in a large skillet cook the bacon until crisp, 8 minutes. Add the bourbon and cook until evaporated, 1 minute. Transfer bacon a paper-towel lined plate.
- Once the potatoes are tender, drain and transfer to a large bowl. Add in 3 strips of crumbled bacon , heavy cream, butter and maple syrup. Mash with a potato masher until you achieve desired consistency (I like mine smooth). Top with remaining strip of crumbled bacon and a drizzle more of maple syrup. Serve warm
