Scones
- 3 1/2 cups flour
- 1 cup whole wheat flour
- 1 cup oats
- 2 tablespoons baking powder
- 2 tablespoons sugar
- 2 teaspoons salt
- 2 sticks butter, unsalted, cold and diced
- 1/2 cup buttermilk
- 1/2 cup maple syrup
- 4 eggs
- Egg Wash (1 egg + 1 tablespoon water)
Glaze
- 1 1/4 cup confectioners sugar
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400 degrees and spray a baking sheet with pam. In a large bowl, combine the flour, wheat flour, oats, baking powder, sugar and salt. Add to a food processor along with the butter, pulsing until the butter resembles small peas, 2 minutes. Add back to the large bowl. In a separate medium bowl, combine the buttermilk, maple syrup and eggs. Stir until just combined. Dump the dough onto a floured work surface and roll into a large rectangle, 1 inch thick. Cut into 12 triangles or 3-inch rounds and transfer to the baking sheet. In a small bowl, whisk together the egg and water. Brush the tops of each scone with the egg wash and bake for 20-25 minutes or until slightly golden brown. While the scones are baking, baking the glaze by combining all ingredients together in a bowl. When the scones are cooled, use a fork to drizzle each with the glaze. Sprinkle some extra oats on top if you wish. (The warmer the scones are, the thinner the glaze will be).
