Maple, Bacon, Chocolate Chip Cookies

Ingredients
- 8 strips of bacon
- 1 cup brown sugar
- 1 3/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 sticks butter, melted
- 2 egg yolks
- 1 tablespoon maple syrup
- 1 cup dark chocolate chips
Instructions
- Begin my preparing the bacon. Preheat the oven to 400 degrees and line a baking sheet with foil. Place the bacon on the sheet and sprinkle with 1/4 cup brown sugar, patting to make sure it sticks. Bake for 12-15 minutes or until the bacon is cooked and the sugar is caramelized. You want the bacon to be very crispy. While the bacon is cooking, begin making the cookie batter. In a large bowl, beat together the butter, 3/4 cup brown sugar, eggs, and maple syrup until smooth. In a separate small bowl, combine the flour, baking soda and salt. Add the dry ingredients to the wet, adding a few more tablespoons of flour if dough is too wet. Stir in the chocolate chips. Scoop tablespoons of dough onto greased baking sheets and use your thumb to create an indentation in the center of each. Add crumbled bacon bits, about 1 teaspoon, to the center of each. Bake cookies for 11-12 minutes in a 325 degree oven. Cool before serving.
