Lime Shortbread Cookies w. White Chocolate Coating

Cookies
- 3 limes, zest
- 3 tablespoons sugar
- 2 sticks butter, room temperature
- 1/2 cup confectioners sugar
- 1/2 teaspoon vanilla extract
- 1 teaspoon salt
- 1 2/3 cups flour
- 1/4 cornstarch
- 1/2 cup water
Topping
- 1 lime, zest
- 1/4 cup sugar
- 6 oz white chocolate chips, about half of a standard bag
- 1 tablespoon canola oil
Instructions
- Preheat the oven to 325 degrees and spray two large baking sheets with pam. In a small bowl, combine the flour and cornstarch together. In large bowl, combine the lime zest and granulated sugar. Add the butter, confectioners sugar, vanilla and salt and beat using a hand mixer until light and fluffy, 3 minutes. Working in batches, add the flour mixture until combined. Gently knead the dough together by hand. Scoop the dough into heaping tablespoons onto the baking sheets, about 1 1/2 inches apart. At this point, I found the dough too crumbly to form into cookies, and added 1/2 cup of water, mixing to combine. Press the cookies down slightly with the heel of your hand. Bake for 11-13 minutes or until lightly golden brown. Allow to cool completely before finishing with the topping ingredients. While the cookies are cooling, combine the sugar and lime zest together in a small bowl. In a separate medium, microwave-safe bowl, add the chocolate chips and canola oil. Microwave on high for 30 second intervals, stirring after each time with a spoon. It took around five 30-second intervals for the white chocolate to be completely melted for me. Using your hands, dip the top of each cookie into the white chocolate. Sprinkle each cookie with a pinch or two of the lime zest & sugar mixture while the chocolate is still warm. Transfer to the fridge or allow the cookies to cool until the chocolate has hardened, 30 minutes.
