Crust
- 1 1/2 sticks butter, cold and cut into 1 inch cubes
- 2 cups flour
- 1/2 cup brown sugar
- 1/2 teaspoon salt
Filling
- 4 eggs
- 1 1/2 cups sugar
- 3 lemons
- 1/3 cup flour
- 3 tablespoons confectioners sugar
Instructions
- Preheat the oven to 350 degrees and spray a tart pan with a removable bottom with pam. Add all crust ingredients to a food processor and pulse until the butter is the size of leads. Pour into the pan and using your hands, press on the bottom and up the sides. Bake for 20 minutes or until golden brown. While the crust is baking, prepare the filling. In a large bowl, whisk the eggs and sugar together until combined. Add the zest of 1 lemon and the juice of all 3 along with the sugar, stirring to combine. Pour into the crust and bake at 300 degrees for 30 minutes or until set. Cool completely before removing from the pan, 1 hour. Dust with the confectioners sugar, slice and serve.
