Lemon Blackberry Sour Cream Muffins

Ingredients
- 2 cups flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 8 oz. sour cream
- 1/2 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 2 lemons, zest
- 1 cup fresh blackberries
Instructions
- In a large bowl, combine the flour, sugar, baking soda, baking powder and salt. In another medium bowl combine the eggs, sour cream, oil, vanilla and lemon zest. Stir the wet ingredients into the dry, being careful not to over mix. Fold in the blackberries.
- Preheat the oven to 400 degrees and line a muffin tin with liners and spray with pam. Fill each cup 2/3 the way with batter and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Cool before removing from the pan.
