Ingredients
- 1 lb. pizza dough
- 2 tablespoons olive oil
- 1/2 pineapple, peeled, cored and cut into rings
- 1 bunch scallions, sliced thin (whites and greens)
- 1/4 cup barbecue sauce
- 1 tomato, diced
- 1 cup pepper jack cheese, shredded
- 1/2 cup muenster cheese, shredded
- 1/4 lb. ham, diced
Instructions
- Preheat the oven to 475 degrees and spray a pizza pan (or large baking sheet) with pam. Brush the dough with one tablespoon of olive oil. Grill the pineapple rings until marked, 4 minutes per side. Transfer to a plate. In a medium pan, add the remaining tablespoon of olive oil and cook the scallion whites until soft, 5 minutes. Add the barbecue sauce and tomatoes. Spread on the bottom of the dough and top with cheeses, ham and pineapple. Bake until the crust is golden and the cheese is bubbling, 15 minutes. Top with scallion greens and slice into square or triangle pieces.
