Gruyere Cauliflower Gratin

Ingredients
- 1 (3-pound) head cauliflower, cut into florets
- 1/2 stick butter
- 3 tablespoons flour
- 2 cups milk, hot
- 1/2 teaspoon pepper
- 1/4 teaspoon nutmeg
- 1/2 cup Parmesan
- 1 cup Gruyere, grated
- 1/2 cup bread crumbs
Instructions
- Preheat the oven to 375 degrees and spray a 9X13 baking dish with pam. Boil a large pot of salted water and cook the cauliflower for 5 minutes or until tender. Drain. In a medium pan over medium heat, melt 2 tablespoons of butter. Add the flour and stir until lightly brown, 2 minutes. Meanwhile, microwave the milk in a mug for 1 minute. Add the milk to the pan and bring to a boil. Whisk until thick, 2 minutes. Turn off the heat and add 1 teaspoon salt, the pepper, nutmeg, parmesan and 1/2 cup Gruyere. Stir until smooth. Pour 1/3 of the sauce into the bottom of the baking dish. Place the cauliflower on top and top with rest of the sauce. Combine the breadcrumbs with the remaining 1/2 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Bake for 25-30 minutes or until bubbling and slightly browned. Serve hot or warm.
Notes
- You can make this ahead of time, cover with plastic wrap, and refrigerate before baking off the next day if you wish.
