Grilled Eggplant & Olive Pizza

Ingredients
- 1 ball pizza dough, homemade or store-bought
- 1 lb eggplant cut into 3/4 inch thick rounds
- 1/3 cup chopped green olives
- 1 cup shredded provolone cheese
- 1/3 cup olive oil
- 1 garlic clove, minced
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 450 degrees and spray a pizza pan or large baking sheet with pam. On a lightly floured surface, roll out dough and transfer to pan. Combine garlic and oil and brush onto eggplant slices. Season with salt and pepper and grill over medium heat until tender, around 7 minutes. Add eggplant on top of the dough, along with cheese, olives, and parsley. Bake for 12-15 minutes or until cheese is melted and crust is golden brown.
