Goat Cheese Pizza w. Spinach & Butternut Squash

Ingredients
- 1 ball pizza dough, homemade or store-bought
- 2 cups cubed butternut squash (I bought pre-cut, but a 2 pound squash cut into 1/2 inch cubes works)
- 1 medium red onion, thinly sliced
- 2 cups chopped baby spinach
- 4 ounches goat cheese, crumbled
- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil, plus 1 teaspoon
- flour
Instructions
- Heat oven to 400 degrees and spray a pizza pan or large baking sheet with pam. On a lightly floured surface, roll out dough and transfer to pan. On a separate baking sheet, toss squash with 1 teaspoon oil, salt, and pepper and bake until tender and lightly browned, 25 minutes. Meanwhile in a large skillet heat 1 tablespoon of oil and cook onion until tender, 10 minutes. Add 2 tablespoons water and cook for 5 more minutes. Top dough with cooked onion, cooked squash, cheese, spinach, and thyme and bake at 450 degrees for 10-15 minutes or until cheese melts. Cut into slices and serve!
