Ingredients
- 1 cup wheat flour
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons ginger
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2/3 cup melted coconut oil
- 2/3 cup maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup almonds, finely chopped
- 1 cup dried cranberries
Instructions
- Preheat the oven to 350 degrees and spray a 9X13 inch baking pan with pam. In a small bowl, combine the flour, baking powder, ginger, cinnamon, nutmeg and salt. In a large bowl mix together the coconut oil, maple syrup, eggs and vanilla. Add the dry ingredients to the wet and mix until combined. Add in the oats, almond and dried cranberries, stirring to combine. Pour the batter into the pan, distributing evenly. Bake for 25-30 minutes or until the edges are lightly browned. Cool completely before cutting into bars, 2 hours. Best stored in an airtight container.
