Ingredients
- 2 1/4 cups flour
- 1/2 cup rolled oats
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 sticks butter, softened
- 3/4 cup light brown sugar
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2 cups semi-sweet chocolate chips
Frosting
- 2 tablespoons butter, softened
- 2 cups powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
- 1 teaspoon red food coloring
- 1 bag mini marshmallows
- 1/2 cup slivered almonds
Instructions
- Preheat the oven to 350 degrees and spray two baking sheets with pam. In a medium bowl, combine the oats, flour, baking soda, baking powder, salt, and cinnamon.
- In a large bowl, beat together the butter, brown sugar and sugar until fluffy, 3 minutes. Add vanilla and eggs.
- Add the dry ingredients to the wet ingredients, 1/2 at a time. Stir in chocolate chips.
- Using an ice cream scoop, scoop cookie dough onto baking sheets, 2 inches apart. Bake for 12-14 minutes until the edges are golden brown.
- While the cookies are baking, make the frosting by beating together all ingredients in a medium bowl.
- Once the cookies are cooled, cut each in half and spread a thick layer of frosting on the bottoms of half the cookies. Place 5-6 mini marshmallows on top of the frosting. Sandwich cookies (frosting half with non-frosting half) and place two slivered almonds in centers of each sandwich for teeth 🙂
