Curry Sweet Potato Salad w. Green Beans & Golden Raisins

Ingredients
- 1/3 cup olive oil
- 1/2 cup golden raisins
- 3 teaspoons curry powder
- 1 cup Greek yogurt
- 2 cups green beans
- 2 pounds sweet potatoes, cubed
Instructions
- Place sweet potatoes in a large pot and fill with enough water to cover. Bring to a boil and allow to cook until fork tender, 20 minutes. During the last 5 minutes, add the green beans and cook until tender, 5 minutes. Drain and transfer potatoes to a large serving bowl, and green beans to a bowl of ice water to blanch them and keep their bright green color. In a small skillet over medium heat, heat the olive oil, golden raisins, and curry powder, 3 minutes. Add to the bowl of potatoes along with the green beans and Greek yogurt, tossing to combine.
