Bars
- 1 1/2 cups light brown sugar, packed
- 1 1/2 sticks butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon
- 1 cup dried cranberries
- 6 ounces white chocolate chips (I used half a bag of Ghirardelli)
Frosting
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 6 ounces white chocolate chips
- 1 tablespoon vegetable oil
- 1/2 cup dried cranberries
Instructions
- Preheat the oven to 350 degrees and spray a 9X13 baking dish heavily with pam. In a large bowl combine the brown sugar and melted butter. Allow to cool before adding the eggs and vanilla. In a separate medium bowl, combine the flour, baking powder, salt, and cinnamon. Slowly add to dry ingredients to the wet. Fold in the cranberries and chocolate chips. Spread the batter into the pan (batter will be very thick). Bake for 20 minutes or until a toothpick inserted in the center comes out clean. While the bars are baking, begin making the frosting. In a large bowl, beat together the cream cheese and powdered sugar with a mixter until combined. In a double broiler melt the chocolate chips with the vegetable oil. Add the melted chocolate to the mixture. Once the bars are completely cooled, spread the frosting evenly over them. Top with dried cranberries and cut into triangular bars. Store in fridge.
