Coconut Orange Macaroons

Ingredients
- 1/2 cup butter, room temperature
- 3/4 cup sugar
- 1/8 teaspoon salt
- 1 tablespoon orange zest, peel of 2 oranges
- 3 large eggs
- 6 cups shredded coconut
- 6 ounces white chocolate, melted
Instructions
- Preheat oven to 325 degrees. Spray two baking sheets with pam. Using an electric mixer, beat the butter, sugar, and salt until blended. Add orange zest and eggs, one at a time. Mix in the coconut and drop tablespoons of batter onto the baking sheets, placing an inch apart. The batter won't expand too much when baking. Bake for 20-25 minutes or until browned on top. Using a double broiler or bowl over a pot of boiling water, melt the white chocolate while the cookies are baking. Using a fork, drizzle the chocolate over the cookies. Allow to cool completely before removing from the baking sheets, or else the cookies may fall apart.
