Cocoa-Chile Rubbed Pork Tenderloin

- 2 (1-1/2 lb) pork tenderloins
- 2 tablespoons olive oil
Spice Rub
- 1 tablespoon chili powder
- 1 tablespoon plus 1 teaspoon cocoa powder, unsweetened
- 1 tablespoon plus 1 teaspoon dark brown sugar
- 1 tablespoon plus 1 teaspoon salt
- 1 teaspoon cumin
- 1/2 teaspoon pepper
- 1/2 teaspoon cinnamon
Instructions
- Pat the tenderloins dry with paper towels, and rub all over with a tablespoon of oil each. Sprinkle each heavily with the spice mixture, making sure to rub into every part of the pork. Set aside at room temperature for 30 minutes (or refrigerate for up to a day). Heat a gas grill to 375 degrees. If the tenderloins have been refrigerated, allow them to sit at room temperature for 30 minutes. Place the tenderloins on the grill and cook until browned all over, 5 minutes a side (about 20 minutes total). Transfer to a cutting board and allow them to rest for 10 minutes before cutting into 1/2 inch thick slices.
