Muffins
  1. 5 tablespoons butter, softened
  2. 1/2 cup sugar
  3. 1 egg
  4. 1 teaspoon vanilla extract
  5. 1/2 cup milk, I used almond milk
  6. 1 1/2 cups flour
  7. 1 1/2 teaspoon baking powder
  8. 1 teaspoon cinnamon
  9. 1/4 teaspoon nutmeg
  10. 1/2 teaspoon salt
  11. 8 teaspoons Nutella
Topping
  1. 3 tablespoons butter
  2. 2 teaspoons cinnamon
  3. 1/4 cup sugar
Instructions
  1. Preheat the oven to 425 degrees. Spray muffin pan with cooking spray and set aside. In a large bowl using a mixer, cream butter and sugar together until fluffy. Add in egg, vanilla extract, and milk. In a separate bowl mix together the flour, baking powder, cinnamon, nutmeg, and salt. In small batches add to dry ingredients to the wet. Spoon 1 heaping tablespoon of batter into the muffin tins. Layer each with 1 teaspoon Nutella and spoon another tablespoon of batter on the top. If the muffin tins are completely full, that is ok, they won't overflow during baking. Bake for 5 minutes. Remove pan from oven, reduce oven to 350 degrees and bake for an additional 15-17 minutes or until batter is set. Allow to cool before taking out of tins. While the muffins are cooling, melt the 3 tablespoons butter in the microwave and in a separate bowl mix together the cinnamon and sugar. Brush each cooled muffin top with melted butter and dip in the cinnamon sugar mixture. Swirl around to get a thick coating. Enjoy!

  1. Great served warm or cooled.
