Cinnamon Roll Pizza
- 1/2 cup plus 2 tablespoons warm water
- 1 package active yeast, 2 1/4 teaspoons
- 1/8 teaspoon salt
- 6 teaspoons sugar
- 1 cup whole wheat flour
- 1/2 cup flour
- 1 teaspoon cinnamon
- 3 tablespoons brown sugar
- 3 tablespoons butter
Glaze
- 2 ounces light cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon vanilla extract
Instructions
- In a large bowl, combine the water, yeast, salt and 2 teaspoons granulated sugar. Let sit until slightly frothy, 5 minutes. Mix in the remaining 4 teaspoons sugar, whole wheat flour, 1/4 cup flour, and 1/4 teaspoon cinnamon. Continue adding more flour until the dough is no longer sticky, kneading with your hands. Transfer the dough to a floured work surface, and using your hands continue to knead for 5 minutes, until all ingredients are incorporated. Place the dough ball in a large bowl coated with pam, and cover with a clean towel. Place in a warm place to rise for an hour, until doubled in size. While the dough is rising, combine the brown sugar and remaining 3/4 teaspoon cinnamon in a small bowl. Once the dough has risen, flatten it with your hand on a well floured surface and cut into 12 equal portions. Roll each piece out into a 1/2 inch wide rope about a foot in length, and flatten each slightly with your hands. Melt the butter in a small bowl in the microwave. Using a brush, brush a bit of melted butter on each piece and sprinkle with some of the cinnamon sugar mixture, gently pressing the mixture into the dough. Starting with one piece, turn the flattened rope on its side and coil the dough around itself, with the cinnamon sugar side on the inside of the roll. Add the next rope by pinching the two ends together. Continue coiling the dough in the same manner with remaining 11 pieces. Once done, it should look like a giant cinnamon roll.
- Preheat the oven to 400 degrees and transfer the giant cinnamon roll to a greased baking sheet. Flatten slightly and sprinkle on top with remaining cinnamon sugar, if you have any. Bake for 12-15 minutes or until the edges are golden. Let cool in pan for 10 minutes before transferring to a large plate. While the cinnamon roll continues to cool make the glaze. Combine all glaze ingredients together in a small bowl until smooth. Transfer to a ziplock bag and using scissors, cut off a corner of the bag. Once the cinnamon roll is completely cool, pipe the glaze onto the roll in circles (as shown above), starting in the middle. Cut into slices, serve and enjoy! Warm slice in microwave for 30 seconds before eating if you wish!
