Ingredients
- 1 (9 inch) oreo crust
- 1 cup sugar
- 3/4 cup heavy cream
- 3/4 cup buttermilk
- 3 tablespoons cornstarch
- 4 egg yolks
- 4 ounces semi sweet chocolate, chopped (I used Ghirardelli)
- 1 tablespoon butter
- 3/4 teaspoon vanilla extracr
Whipped cream
- 1 3/4 cup heavy cream
- 3 tablespoons confectioners sugar
Instructions
- Bake oreo crust according to directions. I brushed mine with egg wash and baked for 10 minutes at 350 degrees. Meanwhile in a small pan combine sugar, heavy cream, buttermilk, cornstarch and a pinch of salt and whisk into smooth. Boil over medium heat until the mixture thickens, 5 minutes. Continue cooking at low boil for 5 minutes, stirring constantly.
- In a small bowl, beat the egg yolks. Pour 1/2 cup of hot mixture into yolks and whisk. Pour egg yolk mixture into pan and cook, 2 minutes. Pour pan mixture into a large bowl and add in chocolate, butter, and vanilla, whisking until combined. Cover bowl with plastic wrap and refrigerate until cool, 30 minutes. Next make whipped cream by beating heavy cream and confectioners sugar with an electric mixture until stiff peaks form, 5 minutes. Fold 1/4 of the whipped cream into the cooled chocolate mixture and pour into cooled oreo crust. Refrigerate until firm, 4 hours. When ready to serve top pie with remaining whipped cream (keep in fridge), slice and serve!
