Chocolate Chip Cookie Dough Peanut Butter Cups

Ingredients
- 2 1/2 cups milk chocolate chips
- 1 stick butter
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1/4 cup peanut butter
- 3/4 cup powdered sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/2 cup mini milk chocolate chips
Instructions
- In a large pan, heat the butter until melted. Whisk in the brown sugar until dissolved, 5 minutes. Remove from the heat and add the peanut butter and vanilla. Let sit and cool completely, 20 minutes. Line a muffin tin with liners. Melt half of the chocolate chips ( 1 1/4 cups) in the microwave in 30 second intervals, stirring in between until smooth. Drop 1 teaspoon of chocolate into each liner if using a mini muffin tin and 2 tablespoons if your using a standard muffin tin. Using a pastry brush, brush the chocolate up the sides of the liner. Place in the freezer until hard, 20 minutes, Once the peanut butter has cooled completely, add in the powdered sugar, flour and salt until combined. Fold in the mini chocolate chips. The batter should be slightly wet. Place in the fridge for 20 minutes to harden. Remove the muffin tin from the freezer and place 1 teaspoon of cookie dough rolled into a ball into each liner if using a mini muffin tin and 1 tablespoon if your using a standard muffin liner. Melt the remaining 1 1/4 cups chocolate chips in the microwave until smooth. Cover each cookie dough cup with remaining chocolate, smoothing with a spoon. Freeze until firm, 15 minutes.
Notes
- There are best kept in the fridge, as they tend to melt a tad when kept at room temperature.
