Chicken Sausage & Kale Barley

Ingredients
- 1 cup quick cooking barley
- 2 tablespoons olive oil
- 8 ounces chicken sausage, sliced thin
- 4 garlic cloves, minced
- 4 cups chicken stock
- 1 large bunch kale, stems removed and leaves roughly chopped
- 1 teaspoon fresh thyme
- 1/2 cup parmesan cheese grated
- 1/2 lemon juice
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chicken sausage and cook until browned, 8 minutes. Add the garlic and continue to cook, 2 minutes. Add the chicken stock and bring to a simmer. Stir in the barley and kale and simmer until the barley is al dente and the kale is tender, 10-12 minutes. Remove from the heat, 5 minutes. Add in the thyme, parmesan cheese and lemon juice. Season with salt and pepper.
