Chicken Sausage and Broccolini Risotto

Ingredients
- 12 ounces spicy chicken sausage, turkey and italian also work
- 1 bunch broccolini, roughly chopped
- 1 cup fontina cheese, grated
- 1 medium carrot, chopped
- 1 medium onion, chopped
- 1 cup arborio rice (very easy to find)
- 1 14 ounce can diced tomatoes
- 1/3 cup white wine
- 2 cup chicken broth
- 1 clove garlic, minced
- 3 tablespoons butter
Instructions
- Preheat oven to 450 degrees. Heat 1 tablespoon butter in an ovenproof pot over high heat. Add broccolini and saute until tender, 7 minutes. Transfer to plate. Add sausage, onion, and carrot to pot and cook until meat has browned, 8 minutes. Add rice and garlic and cook for 1 more minute. Add wine to pot and cook until evaporated, 2 minutes. Add chicken broth, tomatoes, and 1 cup water, cover and bring to a boil. Transfer pot to oven and bake until rice is tender, 15 minutes. Remove pot from oven and add cheese and 2 tablespoons butter, stirring until creamy. Add broccolini, serve, and enjoy!
